Easy to prepare, flavorful and very tasty drink that you can not buy in the store. Next, I will tell you how to make a liqueur from grapes at home using the classic technology. Lovers of strong alcohol can raise the degree by adding vodka or alcohol (the second recipe).

Attention! For the preparation of homemade grape liqueur berries can not be washed, they are only separated from the bunches and carefully sorted, removing rotten and moldy. On the skin of the fruit live wild yeast, which is needed for fermentation. The grapes themselves are best harvested in warm, dry weather, they should be ripe (even over-ripe is better).

Traditional liqueurs are prepared by natural fermentation, so nothing will work without wild yeast. If the drink has not fermented, you need to add a handful of raisins or a few fresh unwashed crushed grapes. The most delicious liqueurs are obtained from sweet grapes of red and white nutmeg varieties.

Classic recipe for grape liqueur

A natural drink based on wild yeast without vodka and other ingredients. In the case of very sweet berries, the amount of sugar can be reduced.

  • ripe grapes – 2 kg;
  • sugar – 500 grams;
  • water – 500 ml.

1. Mix the water and sugar in a saucepan and bring the mixture to a boil. Cook over low heat for 5 minutes, removing the white foam. Cool the finished sugar syrup to room temperature.

2. Pour the peeled grapes into a jar and pour the syrup. The liquid should cover the layer of berries by 2-3 cm.

3. Tie the neck with gauze and put the jar in a warm (18-25°C) place for 2-3 days.

4. If there are signs of fermentation (foam, fizz, characteristic sour smell), remove the gauze and install a water seal or a rubber glove with a hole in the finger on the container.

Isabella grape liqueur

In most regions of Russia, the grapes of the Izabella variety have a low sugar content and a specific tart taste. On its basis, you can make a liqueur according to the first recipe, but the result does not always meet expectations, so I advise you to use a separate hybrid cooking technology. This method is also suitable for other varieties, it turns out a stronger drink.

  • grape berries – 1.5 kg;
  • sugar – 500 grams;
  • water – 250 ml;
  • vodka (diluted alcohol) – 0.5 liters.

1. Pour the peeled Isabella berries into a jar and lightly mash them with a wooden rolling pin (to let the juice flow).

2. Add 400 grams of sugar and water. Shake the contents of the jar several times well.

3. Tie the neck with gauze and put it in a warm place for 3-4 days.

4. When fermentation occurs (see point 4 of the first recipe), place a water seal or a medical glove on the container.

5. After 30-35 days, filter the liqueur through cheesecloth, removing the remaining berries.

6. Add vodka (moonshine, alcohol diluted to 40-45 degrees) and mix well.

7. Taste the grape liqueur. If desired, add sugar (100-150 grams).

8. Soak the drink for 3-5 days in a dark, cool place, then strain through a cotton filter and pour into storage bottles.

Homemade liqueur from Isabella grapes with a strength of 20-24 degrees. When stored in the refrigerator or basement, the shelf life of the drink is more than 3 years.
